Decide what the orchard must do
An orchard can supply fresh fruit, preserving stock, cider or wine, firewood, pollinator habitat and, on a larger holding, a saleable crop. Write down which of these you actually want before choosing trees, because each one changes the species, varieties and scale that make sense. A few well-chosen trees that match what you will eat and process beat many trees whose fruit goes to waste.
Plan for the whole year, not just the picking week. Choose a mix of early, mid and late ripening varieties so the fresh season is spread out and the preserving workload is not concentrated in a single fortnight. As with the small homestead decision, match the orchard to the time, land and effort available, and add it to the homestead systems plan so the harvest, storage and processing have a place to go.
Choose the site
Fruit trees need full sun. Aim for at least six hours of direct sunlight a day, and more is better for flowering, fruit set and ripening. A site in the shade of a house or tall trees will grow leaves but struggle to produce a good crop.
Shelter from cold, drying winds helps flowering and reduces wind damage, so a fence or hedge on the cold side is useful. But do not choose a site so sheltered that it traps cold air. Cold air drains downhill and pools in low spots, so the bottom of a dip or hollow is often the coldest place on the land and the most prone to late frost. A mid-terrace or a gentle slope that drains away is usually a safer choice than the lowest ground.
Check drainage before anything else. Fruit trees tolerate a range of soils but do not tolerate waterlogging, and roots that sit in wet soil for weeks will fail. Apples and pears generally prefer a pH of about 6 to 7.5. If the ground is heavy clay or poorly drained, improve it with well-rotted compost, or plant on mounds or raised beds so the roots stay above the water table.
Finally, allow space for the mature size of the tree, which depends on the rootstock. A tree that is cramped will shade its neighbours, dry out, and become hard to prune and pick from.
Choose species and varieties
Apples and pears are the backbone of most UK orchards, and a small number of well-matched varieties can cover fresh eating, cooking and preserving. Add plums, cherries and other stone fruit for variety, but note that some stone fruit prefer a warmer, drier microclimate and a sheltered wall or fence, and they are more sensitive to wet springs.
Choose varieties for three things: how they taste to you, when they ripen, and how well they keep. Many common apples, pears, plums and cherries are hardy across most of the UK, so hardiness is rarely the limiting factor; taste, ripening time and disease resistance usually are. Where you can choose between a susceptible variety and a resistant one that you also like, the resistant variety will need less spraying and less attention.
If you plan to preserve, cider or wine, choose varieties known for that use and stagger their ripening so the work is spread over weeks rather than falling in one overwhelming week. Link the plan to the preserving guide and the food storage plan so the glut has a destination.
Match rootstocks and spacing
The rootstock a tree is grafted onto controls its size, vigour and how quickly it comes into crop, so it is one of the most important choices you will make. Dwarfing rootstocks keep trees small, around two and a half to three metres, and bring them into fruit earlier, which suits small spaces and makes picking easier; they usually need staking and sometimes a support system. Semi-dwarfing rootstocks are a middle ground, and standard, or seedling, trees grow large, often six metres or more, live longer, and need wide spacing.
Space trees to their mature width rather than their size today: roughly three to four metres between dwarf trees, four to five metres between semi-dwarf trees, and six to eight metres between standard trees. Choose the rootstock to match your space, your soil, and your ability to reach the fruit and prune the tree comfortably. In a small garden, dwarfing rootstocks let you fit more varieties into less ground; on open land, standard trees give a longer-lived, lower-maintenance crop.
Plan pollination
Most apple, pear and sweet cherry varieties are self-sterile, which means a tree will not reliably set fruit from its own flowers. It needs a compatible variety flowering at the same time, usually within about ten to twenty metres, with bees moving between the two. Pollination groups describe flowering time: cultivars in the same or an adjacent group are usually the best partners, provided they are compatible and neither is relying on sterile pollen from a triploid cultivar.
There are useful exceptions. Morello and other sour cherries are commonly self-fertile, and Victoria plum is self-fertile, so each can fruit on its own. Bramley's Seedling is not self-fertile: it is triploid, receives compatible pollen but produces little useful pollen for another tree. A mutually pollinating group containing Bramley therefore normally needs two compatible diploid apple cultivars that flower at the same time. Pears are also less forgiving: most need a compatible pollinator, so check an authoritative variety-specific pollination chart rather than relying on the group number alone. If you only have room for one tree, choose a genuinely self-fertile cultivar or a family tree carrying compatible varieties.
Bees do the actual pollination, so a healthy local bee population and some flowering plants near the orchard help fruit set. Note the flowering time of each variety you plant; two trees that bloom weeks apart will not help each other.
Time the planting
Bare-root trees are planted in the dormant season, roughly November to March, while the ground is workable and not frozen. This is the traditional and often the cheapest way to plant, and the trees establish over the following spring. Container-grown trees can be planted in autumn or spring, but avoid planting into frozen or waterlogged ground at any time of year.
Dig a hole wide enough for the roots and deep enough to sit the tree at the same depth it was grown, keeping the graft union clearly above the soil line. Backfill with the native soil mixed with some well-rotted compost, firm it to remove air pockets, water it in, and mulch around the base to conserve moisture. Stake young trees so they do not rock and damage the graft or the roots. If you are building the orchard over several years, plant in phases and get the site, drainage and first trees right before adding more.
Plan the ongoing work
Pruning is the main annual task. Apples and pears are pruned in winter, while dormant, to an open shape that lets light reach the fruiting wood. Stone fruit such as plums and cherries are pruned in summer instead, because cutting them in wet weather raises the risk of silver leaf. Set a pruning date in the diary and learn the basic shape before the trees get large, because it is far easier to train a young tree than to reshape a mature one.
Plan for the common problems rather than discovering them in a bad year. Codling moth is the classic apple pest and can be managed with bagging, pheromone traps or netting; apple scab is a fungal disease reduced by good airflow from pruning and by resistant varieties; birds are best kept off with netting; and deer and rabbits are kept off young trunks with tree guards. Young trees need water in dry spells, and a mulch layer conserves moisture and suppresses weeds.
At harvest, pick each variety at its right stage and store it according to how long it keeps. Write down the varieties, their pollination partners, planting dates and what worked, so the orchard improves year by year instead of being re-guessed every season.
Match the orchard to the use
Plant for the fruit you will actually eat, preserve or sell, and stagger the ripening so the work is spread across the season. A smaller orchard that is fully sited, pollinated and maintained out-produces a larger one that is neglected.
