How simple cheese is made
Milk's main protein, casein, is suspended in liquid. Add enough acid—or a measured amount of rennet—and the protein clumps into curds while the remaining liquid, whey, separates. Drain the whey and you have fresh cheese. Different cheeses use different cultures, acids, temperatures and draining methods, so a quick acid-set curd should not be renamed cottage cheese or ricotta simply because it looks similar.
These are fresh cheeses: they are eaten soon after making, without ageing or ripening. Aged cheeses are a different, more demanding project that needs controlled ripening cultures, careful temperature and humidity and a much longer commitment. Start with a fresh cheese, and only move on to aged varieties once you have a reliable process and a source of guidance you trust.
Choose the milk
Use fresh pasteurised whole milk within its use-by date, but check the label and avoid UHT or ultra-pasteurised milk: the more severe heat treatment can interfere with coagulation and produce weak curds. Whole milk gives good body and flavour; lower-fat milk can work in recipes designed for it but gives a different yield and texture.
Do not use raw milk for these beginner recipes. Raw milk can carry Listeria, Salmonella, Campylobacter and E. coli, and the mild heat of some fresh-cheese methods is not a reliable kill step. Public-health guidance identifies raw milk and some cheeses made from it as higher risk, particularly for pregnant people, young children, older adults and anyone with a weakened immune system. Pasteurisation greatly reduces hazards present in the milk at treatment, but clean handling and prompt refrigeration are still essential because contamination can occur afterwards.
Gather clean equipment
You need a heavy-based pot in stainless steel or enamel—avoid reactive metals such as aluminium, copper and brass, which the acidic milk will leach—a thermometer, a fine strainer or cheesecloth, a wooden or plastic spoon, and a clean container for the finished cheese. A large bowl to catch the whey is useful.
Clean, not sterile, is the standard: wash hands, surfaces and equipment in hot soapy water and rinse well. If you plan to use rennet, buy it from a cheese-making supplier and follow the package rate exactly—rennet is a measured ingredient, not a pinch-and-hope addition.
Make a quick acid-set fresh cheese
Follow a tested recipe for an acid-set cheese such as queso blanco. A typical method heats pasteurised, non-UHT milk gently, adds the measured acid specified by the recipe and leaves the curds undisturbed once they separate from the whey. Temperature and acid quantity control the result, so do not substitute a few improvised spoonfuls for the recipe's measurements.
Pour the mixture through cheesecloth set in a strainer and let it drain for the time the recipe specifies, then salt and refrigerate it promptly. This makes a simple acid-set fresh cheese, not cottage cheese. Cottage cheese uses a different process in which milk is cultured or directly acidified at a lower temperature, the set curd is cut and cooked, and the drained curds may be dressed with cream.
Make ricotta
Traditional ricotta recovers proteins from fresh sweet whey left by a rennet-coagulated cheese. Whey alone gives a low yield, and the whey left after making a high-heat acid-set cheese such as paneer or queso blanco may contain too little recoverable protein to form useful curds. Follow a tested ricotta recipe; many reliable home versions add fresh pasteurised milk to sweet whey before heating and acidifying it.
Ricotta is delicate and mild. It suits spreading, baking into pasta and risotto, and folding into salads, and it is the classic cheese for dishes where a fresh, barely-sweet dairy note is wanted.
Make paneer
Paneer is the simplest of the three: heat the milk to just below the boil, add lemon juice or vinegar, and stir gently until the curd pulls away from the whey. Pour it through cheesecloth and let it drain, but do not rinse it—rinsing washes out the mild flavour that distinguishes paneer from a plain acid curd.
For a firmer block, tie the cloth into a bundle and set a light weight on it for an hour or so. Paneer holds its shape when cooked, which is what makes it useful in curries, stir-fries and grilled dishes where other fresh cheeses would melt away.
Salt and season
Season the drained curds to taste, typically around 1–2% of the curd's weight in salt. Salt adds flavour and slows some microbial growth, but it does not make a fresh cheese shelf-stable—treat it as a refrigerated product from the moment it is drained.
Once you are comfortable with the basics, small additions work well: black pepper or chives for an acid-set fresh cheese, a little olive oil and herbs for ricotta, or chilli for a spiced paneer. Keep additions clean and simple, refrigerate the batch promptly and note what you added on the label.
Store and use
Transfer the finished cheese to a clean container, cover it, and refrigerate it promptly. Fresh cheeses keep for roughly a week in the fridge, so make a batch you will actually eat. Label each container with the cheese, the date and any seasonings, and use the oldest first.
Use fresh cheese where its mildness suits the dish: acid-set cheese in salads or spreads, ricotta in baking and on pasta, and paneer cooked in savoury dishes. Whey can be used in suitable tested recipes or added to soups and batters rather than wasted. Do not assume every batch of whey will make ricotta: acid whey from a high-heat acid-set cheese often has very little recoverable protein left.
Safety limits
Use pasteurised milk only, keep equipment clean and non-reactive, and refrigerate the finished cheese promptly. Discard a batch that smells sour beyond the expected tang, slimy, or otherwise off, or that shows mould—fresh cheese is a perishable food, and a failed batch is not worth rescuing.
Simple cheese making is not a sterilisation step and does not replace a tested process for foods that need one. People who are pregnant, elderly or immunocompromised should follow their clinician's advice about eating home-made dairy, and should avoid soft cheeses made from raw milk entirely. Where you want a firmer safety margin, follow a current recipe from a national food-safety authority or university extension programme rather than an untested one.
