Build a simple root cellar

A simple root cellar is a small, insulated and ventilated room that uses the ground to buffer temperature swings and cool outside air to pull the store toward 32–40°F (0–4°C) in winter. Get the site, ventilation and humidity right, and it can store roots, apples and other crops with little or no powered cooling.

Decide what the cellar must store

A root cellar suits crops that keep well in cool, damp, dark conditions: root vegetables such as carrots, beets, turnips, parsnips and rutabagas, plus apples, cabbages and some other harvests. It is not a general pantry. Onions and garlic need cool, dry, well-ventilated storage rather than the cellar's high humidity, and many crops are better frozen, dried or preserved. Size the project to the harvest you actually grow. A cellar built around a few crates of roots and apples is a useful system; one built around an abstract months-of-foods target becomes a large dig that never gets filled.

Choose the site before you dig

The ground does the work, so the site decides whether the cellar succeeds. Dig below the frost line, where the soil stays close to the annual average air temperature instead of swinging with the weather. In the northern hemisphere, a north-facing slope keeps the cellar cooler in summer and out of direct sun.

Choose stable, well-drained ground above the water table. Watch where water runs after heavy rain: a cellar that floods loses the harvest and grows mould. Keep the excavation away from foundations, septic systems and fuel storage, and put the door where you will actually carry crates in winter—close to the house, on a path you keep clear.

Size a simple cellar

A simple cellar is a small walk-in room, roughly 2–3 m square and 1.8–2 m high: large enough to move through with a crate, small enough to hold its temperature. Start from the storage you listed—pallets of roots, crates of apples—and add room to walk, not room to impress.

Deeper is not better. Below the frost line is enough; deeper means more earth to move, more risk of hitting water, and a harder dig for no storage gain.

Dig and build the shell

Excavate a rectangular pit and slope the floor slightly toward a drain or sump so any water can leave. A concrete floor slab keeps the floor dry and gives a solid base for shelving; where a slab is not practical, a well-compacted gravel base with a damp-proof layer is the minimum.

Build the walls from concrete block, stone or timber with a damp-proof membrane. The earth contact is the insulation—the ground holds the temperature—so the parts that need added insulation are the roof and any wall above ground level. A solid, insulated roof and an insulated, latched door keep summer heat out and stop the cold air at the top of the room freezing in deep winter. Add a step or short ramp so crates can be carried in without lifting.

Support the excavation while you work, and do not dig under or beside a house or outbuilding without engineering advice. A cellar that undermines a foundation is a structural problem, not a storage one.

Ventilate with two openings

Fit two vents on opposite sides of the room: a low intake near the floor and a high exhaust near the ceiling, so air moves through the whole space. Vent pipes of about 10 cm (4 in) diameter are a common choice for a small cellar. Cover both with mesh or a cap to keep out rain, snow and rodents.

Ventilation controls temperature as well as humidity and gases. In autumn and winter, open the vents when outside air is cooler than the cellar to pull its temperature down, then throttle them before the contents can freeze. Close or reduce ventilation during warm or humid spring and summer weather, when outside air would heat the store or condense moisture on its cool surfaces. Use thermometer and humidity readings rather than the calendar alone, while maintaining enough air exchange to prevent stale air and gas build-up.

Manage temperature and humidity

Most root crops keep best at 32–40°F (0–4°C) with high humidity, around 85–95%. Hang a thermometer and a hygrometer at shelf height and check both on every visit. The cellar combines the ground's temperature buffering with insulation and controlled ventilation; none of those alone guarantees the target range.

If the cellar runs warm, use cool night or winter air when available and check the roof, door and exposed-wall insulation; ground contact alone may hold the cellar near the local annual mean rather than the crop's ideal storage temperature. If crops shrivel, the air is too dry—damp packing material can raise humidity around suitable root crops, but it must not leave produce wet. Winter squash needs a separate, warmer and drier store; apples prefer cold, humid conditions but should be separated from crops affected by the ethylene they release.

Fit shelving and store by crop

Use pallets, wooden shelves or crates on blocks, and leave air moving around every crate. Store roots in damp sand, sawdust or straw so they stay moist but not wet. Keep apples in single layers, sorted by variety, and away from crops sensitive to the ethylene gas they release. Store potatoes in the dark—light turns them green and bitter—and never in the same crate as onions.

Do not put onions or garlic in a damp cellar; they need a dry, airy, warmer place. Label and date every crate, inspect the stock regularly, and remove anything soft or mouldy before it spreads to the crate around it.

Keep the cellar safe

Below-ground rooms can collect radon from the ground. Test the cellar with a radon test kit and keep the vents working; the U.S. EPA treats radon as a health hazard in below-ground spaces and recommends testing. Never run a fuel-burning generator or heater in a cellar: carbon monoxide has no safe level in an enclosed space.

Keep the door and steps clear and lit, make sure the structure carries the load of stored crops, and check drainage and the sump after heavy rain. Keep food off the floor and away from fuels, pesticides, cleaning chemicals and animal feed, as with any food store.

Inspect and maintain through the season

Before the harvest, clean the cellar out, repair the shell, check the vents and door, and test for radon if you have not. During storage, check temperature and humidity on every visit, remove spoiled crops promptly, and note what kept well and what did not. In spring, empty the cellar, clean it, and let it ventilate fully before the next season.

Write the routine down—checks, vent positions, what to do if it floods or freezes—so a backup person can run it without guessing.

Build the cellar before the harvest

Dig and build in late summer or early autumn, while the ground is dry and there is time to let the structure settle, so the first thing the harvest meets is a finished, tested cellar.
