Start with open-pollinated varieties
Only open-pollinated (heirloom or landrace) varieties reliably come true from saved seed. They keep their distinct characteristics generation after generation as long as they are pollinated with the same variety. Hybrids, often labelled F1, are deliberate crosses between two different varieties; seed saved from a hybrid plant generally does not reproduce the parent's traits, so it is not worth keeping for replanting.
Check the seed packet or supplier before planning a seed-saving crop. If a packet says hybrid or F1, grow it for the harvest and buy fresh seed next year. If it says open-pollinated, heirloom or seed-saving, you can plan to harvest seed from the best plants. Note the species name as well: crops that look different can belong to the same species and cross freely, while some squash and kale varieties belong to different species that do not cross at all.
Know how your crops pollinate
How a crop is pollinated determines how much protection its seed needs. Tomatoes, peppers, peas and beans are largely self-pollinating: the flower sets seed before or without a pollinator visiting, so they are the easiest crops to save. Squash, cucumbers and melons depend on insects moving pollen between flowers, and corn, spinach and beets are wind-pollinated, with fine pollen that the air carries a long way.
Use this to rank your first attempts. A small saving of tomato, bean or pea seed needs little more than patience and a dry place. Corn and spinach demand the most planning, because their pollen travels far and is hard to contain.
Plan isolation before you plant
The simplest reliable isolation is to save seed from only one variety of a species in a given season. A favourite cabbage one year and a broccoli cultivar the next avoids the problem entirely, and it is a reasonable approach because many vegetable seeds stay viable for years. Isolation only matters when two compatible varieties flower at the same time, so staggered plantings of the same species can also work.
When you must grow several varieties together, use distance, containment or timing. Isolation by distance is the most reliable method, but the required distance depends on the species: it can be as little as a few metres for self-pollinating crops and several hundred metres for wind-pollinated ones. Corn pollen can travel a quarter mile or more on the wind, and squash varieties are commonly isolated by about half a mile when saving seed. Wind-pollinated crops cannot be protected by physical barriers, because the barrier keeps insects out but not airborne pollen.
For insect-pollinated crops in a small garden, containment works: blossom bags over individual flowers suit tomatoes, peppers and eggplants, and netting tents suit squash and cucumbers. Staggered sowing suits crops with a short, uniform flowering period such as corn, and hand-pollination with a brush or by direct transfer can replace insects for corn and squash when space is tight.
Wait for seed maturity, not eating maturity
Most vegetables are harvested for the table long before their seed is mature, so saving seed means leaving a few plants to finish in the ground. The signs differ by crop:
- Beans and peas: pods turn brown, dry and brittle, and the seeds inside are hard.
- Corn: husks and silks are dry and the kernels are extremely hard.
- Squash and pumpkin: rind is very hard; harvest before the first frost and store the fruit for a few weeks in cool conditions so the seed finishes maturing.
- Tomatoes and peppers: fruit is fully ripe, with peppers at their final colour.
- Cucumbers and melons: fruit is left on the vine until it turns yellow and the skin toughens; the seeds inside should be plump and firm.
- Lettuce: seed is ready a few weeks after flowering, when the feathery pappus forms.
- Carrots, onions and other biennials: the plant must survive a cold winter and flower in its second year before seed forms at all.
If a wet autumn or early frost threatens, lift the whole plant and let it finish drying in a warm, airy shed rather than losing the seed to rot.
Harvest, clean and dry
Dry-seeded crops such as beans, peas, lettuce and corn are harvested already dry: strip the pods or heads, rub the seed free and separate it from chaff by hand, by rubbing between the palms, or by winnowing in a light breeze. Wet-seeded crops need crop-specific handling. Tomato and cucumber seed is commonly fermented briefly to remove its gel before rinsing, while melon seed is normally separated from the pulp, rinsed clean and dried without fermentation. Follow a current crop-specific guide rather than treating every fleshy fruit alike.
Whatever the method, seed must be completely dry before it goes into storage. Spread it thinly in a cool, dry, well-ventilated place out of direct sun and check it regularly, turning until it is crisp. Seed stored with moisture in it will heat, mould or lose viability, so when in doubt, dry it longer.
Store seed for the next seasons
Store finished seed in an airtight container in a cool, dry, dark place. A sealed jar in a cold room or the back of a pantry is a good start; a desiccant such as silica gel in the container helps in damp climates. Many vegetable seeds remain viable for years under these conditions. Onion, leek and parsnip seed is comparatively short-lived and should be used first; squash seed often remains viable for five or six years when properly dried and stored.
Label every container with the variety, the species, the date the seed was saved and where it was grown. A germination test the following spring—sowing a dozen seeds and counting how many come up—tells you whether a batch is still worth planting or should be replaced.
Select and keep records
Seed saving is also selection. Choose seed from the healthiest, most typical plants: the ones that suited your soil and climate, resisted disease and produced the flavour and size you want. Remove undesirable individuals from the seed crop, and note what worked so next year's saving improves rather than drifts.
Keep a simple record: variety, parent plant, date saved, quantity, storage location and a germination result. If you share seed with neighbours or a local seed swap, the same record travels with it, and saving a heritage variety you like can also support a seed library or heritage collection.
Two rules keep seed pure
Remove undesirable individuals and prevent cross-pollination. Everything else—distance, bags, timing, hand-pollination—is a way of doing one of those two things.
