Grow indoors through winter

Winter growing works when you accept that light and humidity are the two things the season takes away. Choose fast leafy crops and herbs, extend the day with a timed light, keep the air from drying out, and water by feel rather than by calendar.

What winter changes

Indoors, winter is not about frost but about energy and moisture. Days are short, the sun sits low and reaches windows for fewer hours, and central heating dries the air while the glass itself stays cold. Record what your space actually does in the cold months: direct-sun hours at the growing position, the temperature at leaf level through a full day, and whether the air feels dry near a heater. Choose crops that fit short days

Fast leafy crops and herbs are the reliable winter choices. Loose-leaf lettuce is a good anchor crop: the Illinois Extension guide notes it can be harvested at about four weeks, and lettuce, spinach and rocket all start easily from seed in shallow trays. Herbs that can be grown indoors in winter include basil, chives, oregano, thyme, winter savory, rosemary, parsley, sage and mint, according to the Illinois Extension guide, but all need adequate light. Mediterranean herbs such as rosemary and thyme need a bright position and free-draining conditions. Basil also needs strong light as well as steady warmth to avoid weak, leggy growth; parsley prefers good light but tolerates cooler conditions.

Winter room temperatures are usually within the range these seeds need to germinate. The Oregon State Extension germination table lists optimum soil temperatures of 40–80°F (about 4–27°C) for lettuce and 45–75°F (about 7–24°C) for spinach, so a warm room is rarely the problem in winter — light is. Microgreens are the fastest test of a new shelf: the LSU AgCenter microgreens guide notes they are typically harvested seven to 14 days after germination.

Extend the day with light

Lettuce and herbs usually need six to eight hours of bright light each day, and a winter window rarely delivers that. Where the window falls short, run a supplemental light on a timer for 14 to 16 hours a day. The Illinois Extension guide gives a useful rule of thumb: for every hour of natural light you need around two hours of supplemental lighting, which is why the timer runs long even on the brightest winter day.

Compare fixtures by the light they deliver to the plant area, not by wattage or marketing labels, and hang them at the height the fixture requires. Manage dry air and cold windows

Heated rooms dry the air, and dry air plus still air is where winter problems start. Keep the growing position at around 21°C (70°F) or below and away from direct heat sources, as the Illinois Extension guide advises. To raise humidity locally, cluster plants together with space between them for air circulation, or set pots on a pebble tray filled with water to just below the tops of the pebbles so evaporation moistens the air around the canopy.

Windows are the coldest surfaces in the room. Keep foliage close enough to benefit from the light without pressing against cold glass, and move vulnerable plants back during a cold snap rather than leaving them to sit on a chilled sill. Water and feed for slower growth

Cool, low-light growth uses less water, so the medium dries more slowly than in summer. Check the surface and the weight of the pot rather than watering on a fixed calendar, water thoroughly when it is due, and let excess drain. Feeding also slows down. The Illinois Extension guide suggests a water-soluble fertilizer every two weeks for indoor herbs and warns that fertilising more often can negatively affect flavour and aroma. Follow the product label for the growing method you use, start conservatively, and look at the whole plant before diagnosing a deficiency.

Keep winter problems out

Winter setups fail in predictable ways: condensation on cold glass, mould on damp surfaces, and pests that move indoors with new plants. Wipe up condensation, keep trays and fabric away from damp building surfaces, quarantine anything that comes into the house, and inspect leaves regularly. Rotate containers every few days so plants do not lean hard toward the light, and keep the setup small enough to inspect in a minute or two each day. A winter shelf that is easy to check is easier to keep healthy than a large one you only visit at the weekend.

Plan a winter rotation

Keep the harvest continuous instead of sowing everything at once. The N.C. Cooperative Extension container guide suggests replanting leafy greens every two to three weeks for a continuous harvest, and harvesting individual leaves so each plant keeps producing. Sow small batches, note the date in the garden journal, and let the results decide what to repeat.

Grow the crop the light can carry

Match the winter setup to the light you can actually deliver: a timed light over a shelf of lettuce, spinach and herbs will out-produce a dim corner planted with fruiting crops. Expand only when the current shelf has earned it.
